This Colombian Decaf coffee is decaffeinated using a sugarcane decaffeination process. Multiple varietals are used in this Colombian coffee: Caturra, Castillo, and Colombia (yes, the country of Colombia has a coffee varietal named after it!)

Sugarcane decaffeination, also known as the Natural Decaffeination Method, is a process that uses ethyl acetate (EA) to remove caffeine from coffee beans. EA is a natural compound derived from sugarcane that binds to chlorogenic acids in caffeine, separating it from the bean. The process removes around 97% of caffeine.

The ethyl acetate used in the decaf process is derived from renewable sources and doesn’t pose any health hazards.
